India's coffee plantations are primarily managed by small estate farmers, many of whom have passed down their estates through generations. The coffee harvest takes place once a year, typically between late December and February. These plantations are carefully nurtured in the shade of silver oak trees, with fruit trees like avocados and papayas creating a rich, diverse ecosystem. This natural environment helps the coffee plant thrive, but requires the coffee cherries to be hand-picked due to the challenging terrain.
After harvesting, the cherries are washed, pulped, and dried by the farmers. The parchment-dried coffee is then sent to the dry mill where it undergoes further processing. Here, advanced machines are used to polish, hull, color sort, grade, and pack the coffee into grain pro bags, which are then sealed in jute bags for transportation and sale.
Thanks to the unique biodiverse conditions of the plantations, this coffee offers a distinctive flavor profile with subtle notes of vanilla and baking chocolate. We have only had the opportunity to source a few coffees from India, but we hope to grow this relationship as the origin expands more broadly into the specialty coffee landscape.
